Intro
Why is this on my list.

Beijing duck is such an old recipe, I found out that the restaurant I went to was a sister of a restaurant that’s older than Canada. Think about that! I cannot describe how interesting that is, Peking duck is one of those dishes that is a quintessential Chinese,

There are a lot of dishes that people think are Chinese but are not, like fortune cookies and ginger beef. There are not from China.

But Beijing duck is,  and it is an amazing Meal and even cooler experience, I highly suggest if anybody gets the chance to try it, they do.

The story.

Peking duck

Did you know that the reason it is called that that was the original name of Beijing?

You need to understand that the people I was volunteering for were rich. When I say rich, I mean past 1% percent they have butlers, cooks and driver for god sakes. and a lot of time. So I know that this is it going to be amazing so my host father and mother pack me at my host son into the car. As we are driving I listen to my host son sing happy birthday to  me on repeat for 40 minutes ( god kill me)

But I can’t complain, I think about jumping out the window but  I think that that would stop the chances of me getting Pecking duck so that is why I smile and laugh. My son is cute. I love him but got he can be annoying. After a few more minutes they stop the car and say we’re here.

I hop out of the car it looks like a mall?  I giggle and say oh we’re going to go for some fast food. They laughed at me and say no. We walk in there is no one but I can hear the distant sound of people parting after a few mins I understand that we are heading to the top floor. I feel so baller. we walk into the restaurant and the waiter knows my host father by the name she escorts us to a door…..

They open up the door it is a personal room where it’s me and my host family and some of my father‘s friends. They’ order drinks for everyone. After a few mins, we are all laughing and drinking. O  today we are drinking Baijiu which tastes like gasoline mixed with the fires of hell. It is delicious though don’t get me wrong,   Then suddenly a man knocks on the door Our private room.

He’s wheeling in a cart, covered in a cloth it reminds me of the girl on the Hogwarts express I expect him to look me in the eye and say  “anything from the Trolley love” But it is not that at all. He says hello to all of us. Then he pulls off the cloth and under it is a full duck in its golden beauty and a lot of sharp looking knives. He picks up a knife and starts working he is like a doctor cutting everything into perfect pieces. all while talking and laughing with us in China. Once he is done he lays everything out in a perfect tray and says goodbye.

I  look at it confused, I didn’t understand how you eat Peking duck but I watch everybody, You takes a little warm crepe in your hand. Put on a little bit a red bean paste or chilli paste, some green peppers some pickles cucumber and some green onions. And don’t forget the not perfectly crisp Beijing duck. and you shove it in your mouth like your Trying to learn how to breathe food. That’s not it, we continue to get more trays of food as well as more alcohol everybody sings happy birthday. I get a little cake and a new shirt. It was a really good birthday.

I’ll always remember But if you ever get the chance to have Peking duck DO IT.
