Hello what is on your bucket list?
254.✓Australia- eat at dinner by Heston.
I have always loved Heston – his creativity and imagination towards cooking is something that I absolutely admire and just before I entered Australia I found out that he has a restaurant in Melbourne, so I thought I would cross it off my bucket list.
I’m in my hostel in Melbourne and there’s 36 beds to one room, it’s insane but hey I’m trying to suit up trying to look as nice as possible.
Today I’m crossing something off my bucket list whenever these days happen I tend to smile as today is special – I’m going to dinner by Heston, a world class molecular gastronomy themed restaurant.
I’m wearing my dress pants, a beautiful vest and a dress shirt, I get my hair done and my friends think I’m going on a date but today is a date for myself.
I sit down in the subway not knowing exactly which way I have to go… I know I have to go to central and then after that I have to find my way.
Now as I’m sitting in the subway I start realizing that I’m quite hungry and I start imaging how big the portion sizes will be and realize that they will actually be quite small. That’s right, before I go to a world class restaurant I’m going to eat some Mcdonalds.
So I order a couple burgers at McDonald’s and sit down munching on them, I lose track of time listening to the podcast and enjoying my life before I realize I might run late so I quickly scoff down the last burger and run out, and oh what a change – it’s dark and there’s people just hanging around, I don’t know exactly what I’m going so I pulled out my phone and checked Google maps which says I have to cross a bridge so I walk around looking for this bridge and eventually find it.
The second I walk across the bridge the life of this area changes. There’s super fancy Lamborghinis and tall beautifully designed buildings. I must be close.
So I randomly walk up to a gentleman and ask where the restaurant, he smiles and points in the direction of a huge mall.
I smile and quickly jog up to the mall it turns out that the restaurant is on the seventh floor so I get to the elevator and press the button. It’s amazing how fast it races up, there’s mirrors and beautiful tile and art everywhere, this is how the rich live. I wonder if they notice how crazy and cool it is.
Eventually I make it to the front doors of the restaurant and there’s an optical illusion, I almost run into the wall because I thought it was the door! I’m looking around like an idiot until a really kind and beautiful woman smiles at me and giggles, I told her that I’ve got a reservation. She looks down and asks me to sit and wait.
But I do think about getting a few drinks, I quickly look at the menu and realise it’s $25 dollars per drink, a little expensive but I get one and sit down to enjoy my drink. It’s sweet and strong. Eventually the host tells me that my table is ready so I follow her, I watch her elegantly flow through waiters and waitresses and sits me down. To my left is a huge window showing all of Melbourne and then to my right the kitchen where they are meticulously cooking but there’s no yelling or screaming, it’s chill.
I already ordered my food so they know when in-house. The waitress tells me she will just be a couple of minutes and sets down some fresh bread with homemade butter. She tells me that they are trying over 60 different recipes for butter with different fat content, I laugh thinking how funny that is – very meticulous in the ways which I think is quite nice. I take the knife and cut off a piece of butter. I’ll say that this is probably some of the best butter I’ve ever had my life, it’s creamy and salty with a slight taste of earthen grass, its just beautiful.
Eventually my first course shows up, it’s a hot salad with bone marrow and chicken. I slowly and methodically take apart each individual component. This is the first time that I’ve ever tried bone marrow and it is on my bucket list but I will not consider this is a cross-off as I want to try it in a more interesting scenario. Hopefully my own cow or on my own barbecue.
And then I sit down alone looking out upon Melbourne and I think how beautiful it would be to share this with someone I love or a friend but then I realise sometimes is good to create your own memories, something that you have special for yourself so I smile to myself and take another sip of my cocktail.
Eventually I get my next meal – this one is roasted duck breast and holy shit it’s good, I cut into it and it seeps out it’s beautiful rich juices. I’m enamored at this meal it’s a piece of art and as I’m cutting into my food balls of flame shoot up to my right where the window is and I realise it is a showpiece; there’s a bunch of fireballs shooting out of these towers right in front of our restaurant! I start laughing thinking we are under attack.
But then I get back to my meal it’s delicious I slowly, methodically eat that whole plate getting full but then there’s the desert with the spit roasted pin
